Sweet Potato and Spinach Tots ☺️

Maybe these should be called baked gnocchi, but whatever you call them, they are delicious and the kids are them up, spinach and all!

I'll put more of the process in my stories, but here is the basic recipe:

2 cups cooked sweet potatoes (no skins)

1 cup fresh baby spinach

2 Tablespoons ground flaxmeal

4 Tablespoons water

2 Tablespoons nutritional yeast

1 teaspoon onion powder

1.5 teaspoon pink salt

Add all above ingredients to a large bowl and blend with a hand emulsifier until smooth(ish). You can use a food processor for this too.

Then stir in 1 cup of flour (I used whole wheat). Then stir in 1 cup panko breadcrumbs.

You will now I have a sticky dough. Then take a bit of the mixture and use your hands to roll it out into a snake shape. You may need to add a bit more flour. Then cut into 1/2 inch "pillows". Lay in a single layer on a cookie sheet lined with parchment. Drizzle with a touch of olive oil and bake at 400°F for 35 minutes. I gave them a shake every ten minutes during baking.

This recipe will make 2 trays of tots. We ate half and frozen the other for a busier day in the future 😘

Served here with romesco and obviously ketchup!! And garnished wit some micro basil from @nubble_microgreens 🌱
