2 ingredient (n)ice cream

No, this is no joke. The base of this ice cream is two ingredients... bananas and milk.  Before you write this recipe off, you must try it!  We live on the coast, where there are ice cream stands tempting us on every corner and we eat more than our fair share of it.  It's safe to say we have a house full of ice cream fanatics so I needed a way to satisfy those cravings AND eat healthy.  

The key here is to freeze the bananas before you blend them.  And the riper the banana, the sweeter the ice cream.  We love adding different ingredients to the base of the ice cream (vanilla, cocoa powder, chocolate chips, peanut butter...) and experimenting with our toppings.  The texture is shockingly like real ice cream, but without the guilt.  Which means you and the kids can have it every night ;)

Ingredients:

3 frozen bananas (1 for each person eating)

1/4 cup milk of choice (I use nut milk)

any topping you fancy!

Method:

Peel and freeze the bananas for at least 1 hour.  Break the frozen bananas in half and put in a high powered food processor or Vitamix (if using a Vitamix make sure you use your tamper).  Add milk, and process for 1 minute or until creamy. Serve immediately, add toppings and enjoy!
